Welcome to Dorrigo PepperDorrigo Pepper is currently 'wild-harvested' from our property and neighbouring ones on the pristine Dorrigo Plateau. We are presently preparing to establish plantations to ensure we can have a reliable year round supply of quality product. The berry has a sharp, hot, uniquely spicy pepper flavour. The dried berries can be used in place of common pepper or mixed 50/50 for a less spicy addition. It can be used in pates, terrines, soups, casseroles, quiches, salad dressings or as a general condiment. The crushed or milled leaves can used in the same way, but also have a woody note as well as a spicy flavour. The flavour is subtle when first tasted and increases in intensity for a longer palate. The 'heat' from the berry & leaf is also subtle when first tasted and increases in intensity, but is short lived on the palate.
